March 3rd is Hinamatsuri, the Japanese doll festival, also known as girl's day. They get their dolls out and then put them away, if you put them away too slowly it means you won't get married, or something. Anyway, chirashi sushi is usually eaten today. The rice is coloured three ways, red (coloured with beetroot juice) for good luck, green (coloured with edamame and wasabi) for good health and white for purity. I topped mine with kinpira and pickled ginger, with a carrot rose on top.

Day Three - Chirashi Sushi
